Let me start this post with a question. What happened when you were in Goa? So when I went to Goa for the first time recently, how could it be a trip that I would not remember?
Let me tell you the story of an Italian-German traveler who I met in Goa. At 45, Mario has traveled to 20 countries including France, Germany, Russia, Turkey, the United States, etc. I happened to meet him at the pool deck of my hotel and as filmy as it may sound, our conversation started when he noticed me fussing over the taste of my margarita. Haha! We both got talking, and next thing we knew, we started bonding over our love for food. On learning that I was a food blogger on the hunt for new flavours and food, he recommended that I try this pizza place nearby. He really swore by it and totally managed to convince me to try it when he told me that he found the pizza there more delicious than the pizza back home in Italy! Yes! A claim like that would get anyone intrigued, wouldn’t it?
As children, when we ate yummy food, not always did we give thought to what exactly has been put into a dish or the kind of effort that has gone into putting it together. That’s what made our next #Forker, Himanshu Saini, different than the other kids he grew up with! Coming from a family of Punjabi foodies, he would love to spend time in the kitchen and conjure up new dishes for his food-loving family. From the street food lanes of Chandi-Chowk to the Tresind in Dubai, where he works today, Chef Himanshu Saini stands at the fountainhead of progressive Indian cooking globally! All of 28, Himanshu currently heads this post-modernist Indian restaurant in Dubai. The two year-old restaurant is literally ‘reclaiming the Indian element in modern cuisine’.

A perfect meal for friends and impromptu get-togethers, the pizza is an Italian delight that has found a large number of patrons across the globe. In fact, many non-European countries are so fond of it that they mark their love for the dish with a National Pizza Month dedicated to it. Originally prepared on the Italian lands of Napoli (now Naples) with Sardinian bread and Sicilian cheese, it is the coordinates of this place which gave name to this new ‘across the kitchen counter’ pizza place in town, called 1441 Pizzeria.
